Changes and Updates

Hello, Friends!

Hope that this past week has been a good one for you. We have been in the middle of a winter wonderland and I have greatly enjoyed extra time at home with family and friends.

While snowed in, I got to make some much needed updates and changes to this website.

I’ve you’ve viewed the website lately, you’ve probably noticed it got a big facelift this past week.

After struggling to overcome my lack of technology skills, I finally decided to forgo the self hosted wordpress site and went back to where I first started blogging on the software that I was comfortable with…blogger.

For you, this won’t change much other than I will be able to make my posts more visually appealing and the site will be more easily accessed for mobile users.

There is one downside, for those of you that have pinned different posts or recipes on Pinterest, these pins will no longer work. Same thing goes for any posts that you may have bookmarked.

When I moved the site over, the post formats changed which means that the saved/bookmarked/pinned addresses are now incorrect. I am so sorry for any frustration this may cause for you.

I’ve made updated pins for all of the recipes that you can access HERE which is where I will pin all future Wellness Witness posts.

You can also use the SEARCH feature on the homepage of this website any time you need to quickly locate a post or recipe. I’ve also created a recipe index that you can access at the top of the home page of the website that lists all recipes for you.

Hopefully moving forward the technical side of things will run much more smoothly.

I am so excited for all that is to come through Wellness Witness and through each of you. It’s going to be an amazing journey, friends! If you haven’t yet joined us over at the Facebook page, I encourage you to do so by clicking HERE. Once there, click LIKE and then you’ll be subscribed to any Wellness Witness updates on the Facebook page.

Snow Days 2014

Like much of the Eastern part of the country, we were slammed by a snow storm this week.

Where we live in NC this is not something that happens often, so when it does, it is a major disruption to life.

And for me, during this busy season of trying to raise babies, work outside the home, serve at church, launching a wellness ministry and trying to run my JuicePlus business, it was just the break that I needed.

These past couple days have been good for my soul.

Rest is so important, friends.

Whether it’s 8″ of snow that forces you to stay home and simplify for a few days,

or whether it’s rest you impose proactively because you know it’s needed…it does so much good.

As a family we try to make sure that we have a few nights each week that we are all home together because we recognize how important it is.

We try to set boundaries on the activities we choose to participate in and to keep margin to avoid being burnt out.

But as you probably well know, this is not easy.

And after these past few days, I’m reminded of the benefit of rest and time at home with loved ones.

Another thing that we started today over on the Facebook page was “Thankful Thursday”. I posted and asked people to tell me at least one thing that they were grateful for. The answers that they shared were beautiful.

I’ve learned that when we choose to find something in our circumstances to be grateful for, the problems seem much smaller.

Crock Pot Rotisserie Chicken

Crock Pot Rotisserie Chicken

We go through a lot of chicken in our house. A LOT.

We also stay on the go most of the day on Sunday because of the ministries we are involved in at church. We try not to eat out on Sundays if we can help it, so having a good CrockPot meal is the perfect solution for our family.

This week we tried a new version of the “Whole Chicken in a CrockPot” recipes that we used to do a lot. This one was simply, tasty, and easy.  (Other than getting up at 4 a.m. to start the CrockPot! 🙂 Don’t worry, I went right back to bed!)

 

Ingredients:

–1 5 pound chicken (if the neck and other parts are still inside you have to reach in there and pull those suckers out. No, I’m not kidding. The first time is the worst- after that you’ll be whipping out chicken necks and giblets like a pro!)
–1 lemon
–Any spices that you prefer (We used: Parsley, Oregano, Citrus/Basil Rub, Lemon Pepper, Cumin, Sea Salt, Pepper, Onion Powder, Garlic and Paprika). Bottom line: Use whatever you like and/or whatever you’ve got. You can’t really mess this up.
–Sweet Potatoes (or regular potatoes if that’s what you prefer) wrapped in aluminum foil.
–Aluminum foil balls (Make a few. Trust me on this, just do it)

Instructions:
-Wash chicken and pat dry. Stuff your lemon inside the cavity. Mine didn’t fit all the way so I just shoved it in as far as I could.
-Plop chicken BREAST SIDE down, go wash your hands and get all your spices ready to go.
-Put your sweet potatoes in the bottom of the CrockPot and if you have open space also put in some of your aluminum foil balls.
-Return to your chicken and begin slapping your spices on that bird. Go heavy or go light- whatever your preference is.
-Pick up the chicken and move it to the CrockPot. Place it on top of the potatoes and foil balls BREAST SIDE UP. Go wash your hands again.

-Now slap your spices all over the other side of the bird. At this point, hopefully your lid will still fit on your CrockPot. Mine fit, but it was a close call.
-Cook on LOW for around 8 hours. Check the internal temperature before eating to make sure it is done.

-Be forewarned, when removing your bird from the CrockPot, it may fall apart. It is okay.

Bacon Wrapped Asparagus

Bacon Wrapped Asparagus

Easy recipe.

I’ve never really loved asparagus but this recipe is GOOD.

My friend made it for our Superbowl party and it was delicious.

The original recipe came from the Momsanity Sisterhood page, and we tweaked a bit to fit our preferences.

Ingredients:

10 oz Asparagus (one small bag)

Bacon- we used Maple flavored (yum!) but turkey bacon would be a lighter choice if you’re worried about it

1 TB Balsamic Vinegar

1 TB Extra Virgin Olive Oil

Garlic Powder or  Minced Garlic

Black Pepper

Onion Powder

Instructions:

1. Preheat Oven to 400 degrees.

2. Wash your asparagus and snap off from the bottom joint at the bottom.

3. Wrap one half of a piece of bacon around each piece of asparagus. Continue until all stalks are wrapped in this deliciousness.

4. Line up your stalks on a cookie sheet (line with foil for easier cleanup)

5. Drizzle with your Balsamic Vinegar and Olive Oil.

6. Sprinkle on garlic, onion powder and pepp.

7. Bake for 15 minutes, then flip over and bake another 10-15 minutes.

Seriously good, right?!

Sunday Motivation

I have to be honest with you.

My goal for this wellness ministry isn’t to reach you so I can help you change your clothing size…

Or the amount of weight that you can lift…

Or the amazing fat loss recipes that you can learn to cook.

My goal isn’t any of that.

My goal is to reach your heart.

I want to create in you a desire to draw nearer to God and that from this,  you choose to honor Him with your bodies.

If I’ve missed that, then I’ve missed what God has called me to.

And to be quite honest, so have you.

Friends, a healthy, attractive physique won’t matter one bit if our hearts are ugly…

if our hearts are far from Him…

if we’ve idolized these temporary vessels instead of using them to point to the One who made them.
If tomorrow morning you must choose whether to spend time the Word or to get in a workout, choose Him.

If you must decide whether to pack healthy snacks or to spend 10 minutes in prayer, choose prayer.

No amount of weight or inches that can be lost is worth choosing over a better relationship with our Lord.

You can do this, but only in HIS strength and for HIS glory.

Let your wellness be your witness for HIS name.

At Home Workout Idea…Tabata Style

Tabata workouts allow you to get in a QUICK burn in a short amount of time. They are difficult workouts, but can be done anywhere, even if you have limited space or equipment. Here are some basic ideas to get you started:

WARM-UP PROPERLY BEFORE BEGINNING!

Set #1:
20 seconds burpees
10 seconds rest
20 seconds mountain climbers
10 seconds rest
REPEAT FOUR TIMES
REST ONE MINUTE

Set#2:
20 seconds Squat Jumps
10 seconds rest
20 seconds jumping lunges
10 seconds rest
REPEAT FOUR TIMES
REST ONE MINUTE

Set #3:
20 seconds pushups (drop to knees if needed)
10 seconds rest
20 seconds bicycle crunches
10 seconds rest
REPEAT FOUR TIMES
REST ONE MINUTE
15 minutes and you are DONE!!!!

Cool down and stretch.
