Free Printable: INSPIRATION to keep you going!

Early on in this journey, I needed to constantly remind myself of my “why”. I used a little notebook that I called my inspiration journal to do this with. You can read more about that journal here.

Another thing that I did was to find scripture that was applicable and to speak it to myself. Sometimes even out loud. It gave me the push I needed to keep persevering during difficult moments.

I still pull it out from time to time and last week, I put it together into printable form for anyone that was interested in it. I hope that for someone that reads this, it will serve as the extra push that you needed to get you back on track.

Print out several copies. Put them in your trigger zones. For me that was is my car (hello, drive-through fast food temptation!), my fridge, and my nightstand.

I hope that this resource helps you and encourages you on your journey. Love y’all!

Produce Wash (AKA: Pesticides be gone!)

Those that know me personally can tell you that I’m a bit thrifty. We are HUGE advocates of the Dave Ramsey Plan and we use cash to pay our monthly expenses so that we know we are staying well within our monthly budget.

Switching to a healthier, fat loss friendly way of eating has been a  big shift for us. I have had to gradually increase our grocery budget while finding other categories to decrease.

It IS possible to eat healthy on a small budget, but for us, we have decided to spend more on healthy foods now so that in future years we can spend less on prescription medications, doctor visits and hospital stays. We believe that yes, sometimes eating healthy IS expensive, but not nearly as expensive as the price we would pay if we chose to not take care of our health and had to face those realities down the road. (Sickness, disease, lost time with loved ones, etc.)

We try to buy organic produce and meat when it’s in our budget, but quite often, it’s not. I try to use the items on the DIRTY DOZEN list for my organic purchases, but that is not always possible. After reading recently about the effects of the pesticides used on our produce, I was motivated that I had to do something to try to get a better handle on the amount of these toxins that we were ingesting daily.

I started looking on this website called www.whatsonmyfood.org and learned A LOT! For example, did you know that in 1 strawberry sampling, there are 14 different pesticide residues? Or that 14 of the 52 pesticide resides found on blueberries are neurotoxins which can harm brain development and contribute to falling IQs? Now I am NOT an alarmist, but I have begun to finally learn about the connection between what we put into our bodies and the way our systems are being affected in ALL aspects: physically, mentally and even emotionally.

I began looking into produce washes that might help remove some of these pesticides better than the method I had been using. (Method= splash under the tap water and then swipe with the hand towel. Scientific, huh?)

After trying different versions, I eventually came up with one that I felt like was easy, used ingredients most of us already have on hand, got the produce clean(er), and didn’t leave any type of weird residue or after taste.

 I’ve now incorporated produce washing into my Sunday afternoon meal prep
and have really enjoyed having clean(er), pesticide reduced produce
ready and available for my family to enjoy!

First, I started with several large glass bowls for washing different batches of the produce. You could also use your sink if you wanted to do a large batch, but to be quite honest, my sink wasn’t clean enough and I didn’t want to stop and clean it during meal prep.

In my bowl I put: (I also double and triple the recipe depending on how big my bowl is)
1 cup vinegar
3 cups water
1-2 TB Baking Soda

That’s it. There’s the “recipe”. When you put in the baking soda, it will bubble and fizz and your kids will love it. Then I started dropping in different items of produce.

I let each item soak for 5 minutes, then I removed it to a colander where it was rinsed and allowed to drain.

While the next batch was soaking, the previous batch was rinsed and drained.

From there, I place all produce onto a freshly washed kitchen towel to dry further.


I would change out the water from time to time when it got dirty. Here’s a picture of what the water looked like after a batch of celery.

Each type of produce was washed, rinsed, drained and then dried.

Once it was all done, I began taking another clean towel, wiping each item down and then putting it into containers to be stored for the week. For berries I have found that including a papertowel keeps them fresher for longer. The same goes for lettuces.

There are many other versions of produce sprays/washes/and rinses that you can purchase over the counter or make yourself. For me, this was the best one that I tried, but it is definitely not the only way to get your produce clean. Any of you have other favorite recipes you use to keep your produce clean?

Sharing Our Successes: MEET RAE ANN!!!

I am so excited to share with you this week’s Success story!

I met Rae Ann when we sang in the church choir together. She has an incredible story and she graciously agreed to let me share it with each of you. I hope you are as inspired by this amazing young lady as I am!

My name is Rae Ann, and I am 19 years
old. I have struggled with weight loss most of my life, but it never started
affecting me until my health-starting going down hill a year ago. 
I was never
unhappy with myself until I reached my highest weight of 177lbs. With my weight
being this high, I was sick most of the time with stomach issues, and what they
thought to be gallbladder symptoms. I went through rounds of hospital and
doctor visits trying to figure out why I was in so much pain. 
After 3 years,
there was no answer that any test or doctor could give me, so I gave up until I
had a routine check up with my family doctor before I started college. When I
told her everything that had been going on she simply looked at me and stated,
“You need to lose weight.” Never in my life had I ever had anyone be so blunt
about this situation. I left her office upset, but what I didn’t know is that
she had just sparked a fire in me to change, and to become someone I never
thought I had the chance to be. 

A few
days later, I asked Adrian (my fiancé) if he would support me by going to the
gym with me and help me set goals for healthier eating. “Of course!” was his
reply. So, in August, a week after visiting with my doctor I had started going
to the gym, and I had given up soda and sweet tea. With these two steps I
noticed a huge difference in my energy level, and I was not having as much pain
in my stomach. A month finally passed by and Adrian and I were going to the gym
three to four times a week, and I had not had a soda or sweet tea. It was finally
time to step on the scale, and to my surprise I had lost seven pounds!! This
thrilled me, and it only made me want to lose more. 

Months quickly passed by. I lost on average about ten pounds a month during the
first 3 months. The holidays were extremely hard for me, considering they only
come once a year. Thanksgiving and Christmas put me behind about eight pounds,
but I quickly worked them off to reach my goal.

Once January arrived, I worked
hard each day to lose twelve pounds by March because that is what I set my goal
for. Happily when March came I jumped on the scale only to see that I had reached
my goal! I now weighed 132lbs. Seven months in and I had lost 45lbs!!

I can’t
explain how it feels when you are happy with your body, and when you are happy
with the person you are. It’s an experience that has truly changed my life, and
it has changed my outlook on life. I never knew what it was like to wear a size
small or wear one-digit jean sizes.
My
future goals are to continue this journey, and I would like to lose 5-10 more
pounds, but that will be a few months to come. I’m thankful for the words of my
doctor. Sometimes, it takes an honest person and honest words to set a spark in
someone to challenge him or her to do great things!

The eating habits that I changed were no soft
drinks or sweet tea. Only water! I challenged myself to eat more fruits and
veggies as well, but mostly I portioned my meals. Portioning meals is the key
to losing weight!
·       
My workout routine consist of a method I call 20-20-20.
20 minutes of cardio on the elliptical, 20 minutes of cardio on the treadmill,
and 20 minutes of weight lifting. This way you are in the gym for a total of 60
minutes, and you still get a great workout!

Chicken Salad Balsamic Recipe

I get a lot of my recipe ideas from friends. A friend, Debbie, frequently mentions her favorite go-to meal: Chicken Salad Balsamic.

I made this last week and have to tell you, she was right. It is GOOD.

Now that the days are starting to warm up, this is the perfect Spring option for a quick lunch or suppers eaten outside while your kids run and play.

To start, I took several grilled chicken breasts and cut them into small cubes.

I also prepped my other ingredients and got them ready to add:

Then, mix the olive oil and balsamic vinegar together, then mix with all other ingredients.

We ate ours in romaine lettuce leaves and it was delicious. I made a big batch and we ate on it for a couple days. I don’t think it would be as good after a couple days, but it’s so good I doubt it would still be left after two days anyway.

Ingredients

Original recipe makes 4 to 6 servings
  • 3 cups
    diced cold, cooked chicken
  • 1 cup
    diced apple
  • 1/2 cup
    diced celery
  • 2
    green onions, chopped
  • 1/2 cup
    chopped walnuts
  • 3 tablespoons
    balsamic vinegar
  • 5 tablespoons
    olive oil
  • salt and pepper to taste
Directions
  1. In a large bowl, toss together the chicken, apple, celery, onion and walnuts.
  2. In a small
    bowl, whisk together the vinegar and oil and pour over the salad.
    Season with salt and pepper to taste and mix well. Let rest 10 to 15
    minutes, mix again and chill.

Sharing our Successes…meet Libby!!!

I cannot wait for y’all to read about this Success Story. Libby was a dear childhood friend that I grew up with. She’s now an international missionary and on a journey to steward her health well. Read and be inspired!!

Tell a little bit about yourself.
My name is Libby Green and I am 34 years old.  I am originally from Statesville, NC, but for
the last 16 years of my life I have been living all over the world!  Currently I live in Bishkek, Kyrgyzstan in
Central Asia.  I call Kyrgyzstan my
home.  It has been here Daddy (God) has
been changing my life!  I am an “M”
(Missionary).  I work for my Heavenly
Daddy.  He is my boss! 
Your Story:
-How long have you been on this journey?
I have been on a journey for my entire life, but to really focus on
health it was August 2012. 

–What was the turning point for you? (What made you decide it was time to get
healthy?)
I have struggled with weight issues all of my life, but they did not get
out of control until I was around 15 years old. 
At this time my hero (my grandfather) passed away and this really
affected my life.  I became lonely and
depressed and I took food for my comfort. 
Within a year I gained over 150 pounds. 
 My turning point really happened when I was visiting my friends in
Karakol, Kyrgyzstan and I got very sick and it took me almost 2 weeks to get
over it.  I was miserable!  I knew at this point that to come back to
Kyrgyzstan full time I had to get healthy. 
I went back to the states with a focus to do that.  I went gluten and sugar free, but it only
lasted until winter.  In January 2013 I
decided to visit a nutritionist that only works with organics and focuses on
your body’s needs.  I worked with Dr. Ley
for 6 months and during that time I started as much as possible to eat clean,
but I was still struggling to lose weight. 
During the 6 months I only lost 7.7 pounds. 

When I was approached about moving back to Kyrgyzstan last summer, the
first thing I said was I am not healthy enough. 
I really prayed and asked Daddy to lead me where He needed me!  He led me back to Kyrgyzstan and I felt like
He was saying, “trust me and I will help you do it FINALLY!”
In October Daddy blessed me with a local family to live with!  They are Russian and believe in clean eating,
NO SUGAR, NO WHITE ANYTHING, and no chemicals or preservatives.  They also believe in physical activity!  I was totally adopted in and within two
months I had already lost 35 pounds.  Now
I cannot ever eat sugar or anything with preservatives without getting very
sick!  My system took about 3 months to
total detox, but now these toxic substances make me very sick. 
Now, I am healthier and have more energy that I have ever had in my
life!  I still have about 100 more pounds
to lose but I know now I can do it!
–Pounds/Inches lost?  I have
lost 99 pounds as of 3.30.2014.

–Clothing size difference?  I was
a 28 and now I am a 16.

–Any other medical stats that changed such as cholesterol, blood pressure,
blood sugar, etc.?
I was diagnosed with PCOS when I was 19 years old.  I was also told at 22 I would never have
children.  At this time I have been
healed of the PCOS and I was told in March I could in fact have children!

–What is your workout routine/schedule like?

I now workout at least 3 times a week with resistant bands.  Aerobics at least 3 times a week.  I also walk about 3 to 5 miles a day! 

–What eating plan or food choices do you follow?
I eat clean.  I even use clean
homemade products such as soaps, shampoos, and toothpaste.
I also oil pull ever morning for 20 minutes and I drink 2 tablespoons of
Apple Cider Vinegar in 16oz of water every day. 
I also drink raw honey, lemon, and cinnamon tea everyday sometimes twice
a day.
Lastly, I drink about 2 to 3 liters of water a day or more depending on
activity.


–What helped you the most on this journey to be successful?
I think giving up the white killers and chemicals help me a lot, but
another major help was a huge support system. 
The family I live with and my school family have cheered me on the
entire way.  The most important help has
come from Daddy.  He has held my hand the
entire time and I feel His grace everyday to push on.

-What words of advice do you have to give those who are ready to get started?
Do it!  Your life will never be the
same. 
–What words of advice do you have for those who think they will never
be able to turn things around in regards to their health or that may be
discouraged?
Do it!  You have nothing to lose
and once you take the first step all the other ones get easier and easier!  When I stated in October I could not even
walk half a mile without wanted to stop, but now the sky is the limit!  I did have a hard time giving up the
addiction to sugar, but after two months there was no need for it in my
life.  Even my eczema cleared up. 

–How do you make time for fitness/healthy eating in an already busy schedule?
One of the advantages of living in a post soviet country is life is
slower here.  Yes, my schedule for a
local family here is very full, but I find I have to make time.  If I don’t,  I feel terrible physically, spiritually, and
emotionally.  I try to spend 2 hours a
day really focusing on myself.  During
this time I am doing what I want to do…it can be exercising, reading, listing
to a message or music, walking in the park, watching a movie, so on and so on
(this time never revolves around food)! 
The next 22 hours of the day I allow Daddy to lead them.  Of course I also try to be in bed by 12am
every night!  I have also found that
sleep is very, very important to weight loss too! 
–Any other info you would like to share?
Always remember to follow
Daddy!  He is the best in teaching us
what we need and do not need in our lives. 
When I was 32 years old I told Daddy, I want to move back to Kyrgyzstan!  I believe He said back to me, “I cannot use
you if you are not healthy!”  Now I am
striving to be as healthy as I can so HE can use me for His harvest fields.

Libby is halfway around the world taking the Gospel to those that need it and she has made her personal health and fitness journey happen. She doesn’t make excuses, she is just persevering and making huge steps. So proud to know this amazing lady.

White Chicken Chili

One of my Mom’s favorite recipes to make was Paula Deen’s White Chicken Chili. I LOVE this dish, and the fact that it’s quick and easy makes it even better.

I made a little lighter version of it a few weeks back that I wanted to share with you today.

Wellness Witness White Chicken Chili

Ingredients:
5-6 c. cooked chicken, shredded
4 oz. monterey jack cheese, cubed
2 cans Northern beans, drained and rinsed
1 16 oz. jar salsa
1 box of low sodium chicken broth
2 cups frozen spinach

Tip: I boil my chicken to cook it and then I use my hand mixer to quickly shred it. I had all 6 cups shredded in less than 3 minutes.

Once you’ve shredded your chicken, put it in the bottom of your slow cooker.

 

 

Assemble the rest of your ingredients and dump in:

There are three cans of beans here, but I only used two. I also only used half of the cheese and the spinach isn’t pictured.
 

Cook on High for 4 hrs or low for 6. Suggested toppings from Paula Deen
are crushed tortilla chips, cheddar cheese and sour cream. I used a bit
of greek yogurt and a few whole grain tortilla chips. Delicious!
