I get a lot of my recipe ideas from friends. A friend, Debbie, frequently mentions her favorite go-to meal: Chicken Salad Balsamic.
I made this last week and have to tell you, she was right. It is GOOD.
Now that the days are starting to warm up, this is the perfect Spring option for a quick lunch or suppers eaten outside while your kids run and play.

To start, I took several grilled chicken breasts and cut them into small cubes.
I also prepped my other ingredients and got them ready to add:
Then, mix the olive oil and balsamic vinegar together, then mix with all other ingredients.

We ate ours in romaine lettuce leaves and it was delicious. I made a big batch and we ate on it for a couple days. I don’t think it would be as good after a couple days, but it’s so good I doubt it would still be left after two days anyway.

Ingredients
- 3 cups
diced cold, cooked chicken - 1 cup
diced apple - 1/2 cup
diced celery - 2
green onions, chopped - 1/2 cup
chopped walnuts - 3 tablespoons
balsamic vinegar - 5 tablespoons
olive oil - salt and pepper to taste
- In a large bowl, toss together the chicken, apple, celery, onion and walnuts.
- In a small
bowl, whisk together the vinegar and oil and pour over the salad.
Season with salt and pepper to taste and mix well. Let rest 10 to 15
minutes, mix again and chill.
