Sharing our Successes: MEET Rachelle!

You are going to LOVE this installment of Wellness Witness Success Stories! I found Rachelle on Instagram and have gotten so much encouragement and motivation from her posts. She is an amazing person and has an incredible health transformation story to share with us today. Without further adieu, meet my friend, Rachelle!

Hello! I’m Rachelle and I’m a 1st grade teacher from Utah and I blog at For Blogness’ Sake and What the Teacher Wants.  I wanted to share my story with you today on my journey to health and wellness.  It’s still something I’m striving for every single day, but I’ve come so far!

Since I can remember, I’ve been overweight and self conscious.  I’ve always been athletic and loved all things outdoors, but I let my weight get in the way of living my life!  I gained 60 pounds in my 4 years of college.  When I got engaged, I crash dieted and lost that weight for my wedding.  Guess what happened soon after I got married? I gained back that weight and THEN SOME in less that 3 years. I knew that I had to lose weight by eating right and exercising, but it took me many years to get in the right mind set.  I tried every fad diet, pill, and even more extreme ways to try to lose the weight.  It didn’t work for me.  My body was ready to lose the weight, but my mind was not ready.  It’s a VERY mental process.

After my grandpa died 2 years ago, I heard Jesus speak to me.  People always say that “I found Jesus, but really… Jesus found me (well He was always there, I just needed to listen).  He saw that I was hurting in all aspects of my life (physical, spiritual, mental) and called out to me.  I started going back to church and praying regularly. This is when my life started to just fall into place.  He was showing me THE way and I was going to start doing the work (thank you to my friend Deanna who said that so perfectly).

My whole perspective on life changed and I wanted to be better in all aspects. I knew that my body needed a whole overhaul.  I had bad acne, headaches, stomach issues, back problems, and knee issues. As I was researching online about how to clear acne without antibiotics, I noticed that many sites recommended eliminating certain foods from your diet.  The first suggestion was dairy, sugar and gluten.  I eliminated dairy and immediately my face got better! WHAT?  Food can help my face?  I wonder what in the world else food can do for me.  This started my search on what was ACTUALLY in my food.  Whoa. I was shocked!  I read many articles, blogs, websites, and books.  I researched food and preservatives.  I was appalled! I don’t recommend you do this though. It was a *little* overwhelming. Just take baby steps and you’ll be fine. HA! {Look at #6 on this list for ideas on websites/articles to read}

This is when my husband and I started to make small changes in our diet to move more towards whole food eating…or like I call it, clean eating.  You can read more about my journey with clean eating {here}.

I saw huge changes just by eliminating dairy and gluten (and we stopped drinking soda).  My stomach wasn’t upset all of the time and my acne started to clear up (with a huge help from a holistic skincare regimen).  ALSO, I started to lose weight each week. I started to eat even more clean (no preservatives and lots of fruits/veggies/meat/nuts/seeds).  But I don’t shun any food really. I’m not the food police.  I still enjoy a good piece of pizza and cupcake once in a while. I use the 80/20 rule (80% clean and 20% other)  I try to just fuel my body with the best food possible without feeling deprived (I make a lot of food swaps- spaghetti squash instead of noodles, etc.).  I was very consistent in my weight loss and it seemed to fall off.  I wasn’t really working out too much.

When I lost about 50 pounds, I started to workout with an amazing trainer.  Soon after, she moved and I was left alone.  Luckily, I found Jazzercise!  It’s the BEST!   I also lift heavy weights in the gym.  Strength training has really changed my body!  I love working out now…and believe me,  it’s not always been like that.  I used to loathe working out. It also helps that I have many friends and family members who are on this journey with me. I couldn’t do it without them.

I’ve lost over 100 pounds in 2 years. Losing weight is hard.  But you know what else is hard? It’s hard to be obese, out of breath, depressed, achy, sleepless, and angry. I choose to live a healthy lifestyle because I want to live a long time.  I want to take care of this body and mind that the Lord has so graciously given me. It’s been a hard road, but a road that I will keep trudging on!

My best friends all got together and surprised me with this custom tank top.  They all got one too and were wearing them when they gave me mine.  I just love supportive friends!
My tips for you:
Love your body at every size
Take small, baby steps towards clean eating 
Don’t weigh yourself more than once a week
Set SMALL goals (my first goal was to not wear an XXL anymore)
Ask for help (get a trainer and/or nutritionist)
Surround yourself with supporters (I have the best family and cheerleading squad…aka best friends)
Pray and ask for His guidance
Believe in yourself

Lessons learned: what I would tell my 15 year old self

Several years ago, I had a personal blog called The Road Home. It was my lifeline when I was staying home with two young children. I wrote a post called “30 Things” right before my 30th birthday, which was what I would’ve said to my 15 year old self if given the chance.

I thought it would be fun to revisit those today and to add on 3 more things that I’ve learned since then. All text in BLUE is what I’ve added/edited from the original post. Hope you enjoy!

30 Things I’ve learned before turning Thirty! + 3 more as I turn 33

  If I could have
written myself a letter fifteen years ago, these are the things I would
have wanted to know.
    1- It’s really NOT about YOU. When others do hurtful things, most of the time it’s really not about you. But you know what IS about you? The way you choose to react.
    2- You cannot control how others treat you, but you can ALWAYS choose the way you respond.
    3-  Stop
worrying and planning about your future- what to major in, if you will
make the basketball team, if you’ll ever find someone to date and
marry. God has got it ALL figured out and is working a plan that is so
much better than any you could imagine! My life verse is Eph 3:19-20 and it is absolutely true time and time again that God can do abundantly, exceedingly more than all we ask OR imagine!
   4-  Know what you don’t know and don’t be afraid to admit it! Life is all about learning.
   5- You
don’t have to have it all together, all the time. Life is about
feeling safe enough in your own shoes to be able to be transparent with
others and not worry about their perceptions or judgments. LOSE THE MASK, sister. Throw it away.
   6-     If
you’re feeling really comfortable where you are, it’s time to move on.
The only way to grow and do BIG things is to get out of your comfort
zone! Out of your comfort zone? Good- that’s where the magic happens.
   7- Love
is NOT a feeling. It is a choice, a conscious act. Don’t zip through
life simply relying on the emotional high that comes with new love. Find
someone and commit to loving them even when you don’t “feel” like it,
even when they seem unlovable. Even when it’s the last thing you want
to do. Do it anyway.
    8- Postpartum
hormones are no joke. When women say they’re struggling and you think
‘whatever, suck it up’, you will soon learn how wrong you are! Instead
of judging or talking about it, why not offer to help that new mom?
Give her an hour’s break to run errands or to let her catch a nap.Good news- postpartum depression/anxiety WON’T last forever. I promise.
    9- Give more than expected. Even when you don’t want to.
    10- STOP. WORRYING.  Seriously- stop it!STILL working on this one. It’s a moment by moment choice at times.
   11-
Parenting is hard work. That mom that you see at the store who has
kids running wild and acting crazy that you think is absolutely the
worst parenting example ever? You’ll find yourself in that position
more than once. I promise. There will be times your kids can drive you to tears, in the middle of a store or even at a cookout with your friends. It gets better. Their behavior really ISN’T a reflection of you or your parenting styles, and anyone that judges you based on a cranky toddler’s behavior probably isn’t who you want to be impressing anyway.
   12- Seek out mentors. Learn from them. Listen. Accept what they say.
    13- Invest yourself by mentoring someone else.
   14-
Marry your best friend. There will be days that you don’t really like
your husband/wife. If you’re relationship is grounded on friendship as
well as common values and a true commitment, you’ll be able to stick it
out through whatever comes.This will not be easy. It will be worth it.
    15- You
could be angry at times, even justified. But wouldn’t it be easier to
just move on and be happy? Your anger at them is only eating away at
yourself. Do yourself a favor and forgive, then move on!
    16- Pregnancy
affects every single bit of your body, not just the parts you would
expect. It’s also the most amazing experience ever. Totally worth every
single stretch mark, episode of morning sickness, and swollen ankles!
     17- Invest
your money in experiences instead of ‘stuff’.  When you’re older you
won’t sit and think about that beautiful purse you had, but you will
remember all the fun you had on your cruise to the Bahamas!
   18-
It’s all about relationships. Everything. Pour yourself into the lives
of those around you. Build relationships and appreciate them! Dive in and be “messy” in your relationships. When you lose the mask and let your guard down, you’ll learn what real community really is.
    19- People
are going to let you down. They will. Practice grace with them and cut
them some slack. I guarantee you will let them down, also.
    20- There are two things in life you can never have enough of… baby wipes and band-aids! I would add to that coffee and peanut butter. I’m past the baby wipes phase, thank you sweet Jesus.
    21-  Most
friendships are built around commonality. Shared seasons of life,
workplaces, churches, etc. True friendships won’t be built on being in
the same stage of life or even location. It will be with someone who
loves you even when they don’t ‘feel’ like it, that still believes in
you even after you let them down, and someone who truly wants the best
for you in life. This is RARE and hard to find. Once you do, hold onto
it!
     22- Having someone find value and worth in your children is far better than if they say the same thing about yourself! Don’t know that I agree with this in its entirety. Yes, I want people to love my children but if I start letting people’s opinions of them influence the way they see me or the way I see myself, I have let their position in my life get out of place.
    23-No matter how bad things seem, they always get better. Always. “Sorrow may last for the night, but joy comes in the morning”.
     24- Attending
church regularly is ESSENTIAL. Not because this can guarantee
salvation or earn you ‘good behavior points’, but because you need to
be hearing the Word and you need to be committed to a local body of
believers. If Christ was, shouldn’t we be?
     25-  On
that same note, TITHE and watch what happens. The only time in the
Bible that we are told to test God was in tithing. We aren’t simply
recommended to tithe, we are commanded. Do it and watch God work!
    26-
You are never going to please everyone. And there will always be
someone who doesn’t like you. Make up your mind to be happy, regardless.
Don’t change who you are to make yourself more acceptable to others.I’ve finally gotten this one under control and it feels G-O-O-D.
    27-
Our Christian walk isn’t simply about going to church and sitting to
be “fed”. It is SO much more! I lived for many, many years before I
realized that I had never fully grasped what it meant to be a follower
of Christ. It should change EVERYTHING about you and your life. If
you’re really walking with Him the way you should, nothing will be the
same. Period.
    28- A good night’s sleep and a cup of coffee can make anything seem better.  Anything.   The season of sleepless nights with little kids will pass. Before you know it, you’ll be able to even sleep til 7 a.m. or later on the weekends! Hang in there, sweet sister. Better days are coming! 
   29-  Eat
right, most of the time. You’ll feel better, look better and have more
energy. And trust me, even if you think you have cellulite and stretch
marks now, you have NO IDEA how good you look compared to what you’ll
look like after having a few kids 😉
    30-  All
of this life is temporary. One day, our ‘job’ on Earth will be over
and we will be accountable for everything we have done or said, and for
what we have done with the spiritual gifts that God has given to each
believer. Make your life count! Don’t worry about being afraid and
being unaccepted. This world is NOT our home. Get out there and get
going
31- It’s really not about what you look like in the first place. Steward your health well as your offering back to God, as an act of worship. We are His tools and can use our health as a means of praise.
32- Dream big. Find what God is planting in your heart and then pray about it. Ask those you trust to pray with you. I’ll say it again- He can do ABUNDANTLY, EXCEEDINGLY MORE than we ask or imagine. Is your dream so big that it scares you? Good. GO FOR IT. 
33-Be there for others when it really counts, and sometimes even when it doesn’t. The death of parents, the births of children- these critical times to support one another. But so are the days when a friend may feel down, burnt out, or lonely. Learn to look for opportunities to speak truth and love and for ways to show up when it counts and no one else sees it.
 
My thirties have ABSOLUTELY been better than all the years before. God has been doing a new work in my heart and I cannot WAIT to see what the next year ahead will hold for me!

The Incredible Edible Egg

I’ve had the privilege of leading a group of women through Lysa TerKeurst’s Made to Crave study for the last month. Each week, we listen to her teaching, have discussion and then I try to feature a health topic of the week.

This past week, I discussed healthy snack options. One of them being the EGG.

I was amazed at some of the things I learned about eggs while researching for this class. Here are just a few facts about these nutritional powerhouses:

*Eggs have the highest biological value of protein of ANY food (this is a measure of how well it supports our bodies protein needs).

*Eggs are more effective at building protein than protein from all other sources, even milk and beef.

*On average, those who eat eggs consume an average of 164 calories LESS each day.

*In an 8 week study, two groups of people were either given a breakfast of 2 eggs or a bagel (same calories in each). Those that ate the eggs lost 65% MORE weight with NO EFFECT on their cholesterol or their triglyceride levels

*Eggs contain B12 which is used for fat breakdown

*Eggs can increase satiety by 50% (which means you eat less junk later!)

Another added bonus of eggs, they’re extremely affordable. We buy the ones that have Omega 3s added, and even with buying these expensive ones, they average out to only .22 cents an egg!

There are so many ways you can prepare eggs- I have two favorites:
1- scrambled up with as many vegetables as I can get my hands on

2- hard boiled (this is crazy because I used to HATE hard boiled eggs unless they were mixed with mayo in egg salad!)

Wellness Witness Workout #2

Here’s another workout for you to try. The only equipment you need is a set of moderate hand weights/dumb bells (heavier=better).

*Remember, the style of workout is called REST BASED TRAINING. That means you will push until you can’t keep going, and then you rest until you’re ready to start back. You should be breathless, have burning muscles, and be hot.
*Attempt these exercises at your own risk. Wellness Witness is not liable for any injuries sustained while attempting these workouts.

Workout #2:
WARM UP WELL BEFORE BEGINNING!

Set 1: (Each move is 30 seconds)
Curtsy Lunge with side raise, then stand and repeat on opposite side
Squat with a curl (while still in squat), then stand, clean and press overhead
Football Hustle (Fast Feet)
Plie Squat, lift heels while in squat then upright row
*REPEAT THE SET 3 TIMES in a row

Rest 30 seconds

Set 2: (Each exercise is for 30 seconds)
Squats with dumbbells
Drop the weights and continue with squats
Jump Squats
*REPEAT THE SET 3 TIMES IN A ROW

Rest 30 seconds

Set 3: (Each exercise is for 30 seconds)
Y Press
Overhead Tricep Extensions
Scissor Legs
Chest fly then hip bridge
*REPEAT THE SET 3 TIMES IN A ROW

Set 4: (Each exercise is for 30 seconds)
Plank (on elbows)
Russian Twists
*REPEAT TWICE

Set 5: (Each exercise is for 30 seconds)
Squat with pulse at bottom
Squat Jumps
Jumping Lunges
Plank
*ONLY ONE TIME PER EXERCISE FOR THIS SET

A better option than bagged salads…

When I first started out on this healthy eating journey, I purchased a LOT of bagged salad mixes. I would rifle through the bins and pick the one with the absolute latest “BEST BY” date and bring it home on Sunday afternoons. I would prep my salads ahead of time, but always found that the lettuce turned brown and started wilting well before the “best by” date.

As I don’t have time to prepare my lunches each morning, I choose to make them all ahead on Sunday afternoons for the week. One week while grocery shopping, they didn’t have any good bagged salads so I decided to purchase some romaine lettuce.

It looks like this:

and it is a BARGAIN at only $1.77 each.

If you prefer just the Romaine hearts, you can purchase this:

For these three Romaine hearts it will cost you around $2.98.

So that one week when I purchased the Romaine lettuce, I brought it home and soaked it using my Homemade Produce Wash. Then I spun it dry and made our weekly salads and it LASTED ALL WEEK with no wilting, no brown spots for a fraction of the cost of what we had been spending. WIN!

Ever since then, I follow this same process each week.

1- Get a large cutting board and Cut the Romaine into smaller pieces (I don’t like large pieces of lettuce in my salad)

2- Place it into whatever container you will be using to wash it (or soak it). I use my OXO Salad Spinner bowl.

3- After soaking/draining it, remove lettuce from the water and look at what you just washed off!

4- Next you have to dry it well. Again, I use my OXO salad spinner. The kids love to jump in and help with this part. Spin, spin, spin- the more water you get out, the fresher it will be during the week.

5- At this point, I have a ton of beautiful lettuce to use for the week in our salads. I either go ahead and assemble this into individual bowls, or I put all of it into one large ziplock bag so it’s ready to be used at any given moment.

Here’s the important part- make sure the lettuce is as dry as possible before putting it into the bag, then take an absorbent paper towel, fold it and stuff it into the bag. Then, squeeze out most of the air and seal it up.

If you’ve done a good job getting the lettuce dry, it will last ALL WEEK long.

Lately I like to also add other greens and lettuces, so I’ve been buying this brand:

It costs $2.50 at Wal-Mart and adds some variety to our lettuce.

I follow the same process with it as I do the romaine.

1- Chop

2- Rinse/Soak

3- Drain-

4- Spin Dry

4- Pack into bag with paper towel and store for the week

*I know that it takes time to do it this way when you could have just purchased a bag of salad and shaken it into your bowl. But this way, I KNOW that it has been washed well and I know that it will cost less and last longer.

*Another note, don’t skip the step for soaking/washing and draining. With these two batches, I found two baby green worms, three dead fruit flies and all sorts of nasty debris and dirt.

I can’t tell you how much more likely I am to eat a salad when I’ve got clean, chopped, ready-to-eat greens in my fridge.

Hope this helps you a bit if you are tired of wilted, brown salads!
