Flooring Update

After two weeks, the flooring project is almost complete!

All floor has been installed, most of the old carpet and padding taken to the dump, and almost all the molding put back up. We still have some to be put in, plus some painting to be done on the trim work, but this project is ALMOST done! 🙂

We are so thrilled with the results.

My husband, my daddy and my brother-in-law tackled this big job and did such a great job! It saved us $2000, so that’s a huge bonus, too.

While they were hard at work, here’s what me and the kids were doing:


My mom let us crash with her for the weekend, so we had fun relaxing, swimming, indulging in things like ice cream sandwiches by the pool, and a family trip to Tweetsie Railroad.

We have been saving our tax return money from a couple years back for this project and are so glad to have it almost completed. When we bought our house back in 2012, we knew there would be lots of projects that needed to be completed, and now we have checked one more off the list.

I plan to be looking for some rugs in the next few weeks. Anyone have a favorite place to buy them?

Remember Who You Are

Last week was the kickoff for a Bible study I’ve been privileged to lead at my church- Made to Crave. This six week study by Lysa TerKeurst is full of Biblical truth and wisdom about how to begin craving God instead of food. When I read this book a few years back it was the beginning of my journey towards living a healthy lifestyle and really helped me connect my physical health with my spiritual.

We had 50 women sign up to attend and last week 32 of those women showed up, ready to learn. They opened up and shared their stories with the group and I was moved to tears several times by the beautiful stories they had to share.

Tonight was our second meeting and we had 26 in attendance. Again, these women were open and honest and bravely shared pieces of their individual journeys with us. I am learning so much from each of them and am blessed by the time we have together.

Tonight during our session Lysa focused on remembering who we are. As women, many times we let what the world says to us determine how we view ourselves…or worse, sometimes we let our own inner critic determine our value. Tonight we began working to change that.

I took something Lysa had written and added to it things I felt like these women needed to hear. I read it to them and had them just sit and listen with their eyes closed. Many were brought to tears as they were reminded how God sees them. It was such a powerful moment for me, and blessed my heart so much that I wanted to share it with each of you.

Here is what I read to them:

Remember who you are.
You are fearfully and wonderfully made.

Your body is the temple of the living God.

You have been bought with a price. 
You are an instrument for HIS special purpose that has been
made HOLY and is USEFUL to the Master. 
You are loved so much that the hairs on your head are
numbered. 
Before you were knit together in your mother’s womb, God
knew you and loved you. 
You are His.
Your name is engraved on the palms of His hands. 
God says that You are altogether beautiful and there is no
flaw in you (Song of Solomon 4:7)

 You are NOT a failure. You are not
incapable. You are not a loser. You are NONE of those things. You are a
daughter of the King! (From Lysa)

You are capable of victory. You are capable of being
empowered. (From Lysa)
God loves you- from the tips of your toes to the top of your
head. 
There is nothing that you cannot overcome through Christ’s
power. 
You have been set free and no longer live under
condemnation. 
You were made for MORE and you WILL succeed.
You are loved. You are seen. You are held. You are HIS.
Remember who you are.

I encourage each of you to read this. Read it out loud. Maybe you need to read it a few times, or maybe you need to read it to yourself each day. I don’t know who may be reading this, or what is in your heart, but I know this: the devil wants nothing more than for you to doubt your value. He wants you to feel like you AREN’T worth it, that you DON’T matter. This is a lie.

It is time we stop buying into the lie that we are broken, or ugly, or fat, or lazy, or beyond hope. Because we aren’t.

Grilled Asparagus

Last night we tried grilled asparagus.

I may be late to the party because apparently this is a really common item to be grilled, but y’all, it was SO GOOD! And so easy!

So if you’ve known how to make grilled asparagus for ages, please skip over this post. If you might be out there like me and relatively new to the world of asparagus, read on.

My husband brought home a bundle of asparagus from the store this week and I was excited to make our Bacon Wrapped Asparagus recipe. However, I soon realized that we were out of bacon, so had to come up with another plan.

He was grilling some salmon and chicken already, so we decided to just grill the asparagus also.

Recipe:

Ingredients needed:
1 bunch asparagus (washed and hard, woody bottom part snapped off)
1 TB Lemon Juice
1/2 tsp sea salt
1 tsp minced garlic
1 tsp onion powder
1 TB Olive Oil
1/4 tsp black pepper

Mix all ingredients and put with the asparagus in a ziplock baggie. I let mine marinate around 30 minutes, but you don’t have to do it for that long if you’re running short on time.

Grill in basket if you’ve got one, or you can grill in a cast iron skillet or on the grill racks if you can do so without it falling through. Ours cooked for about 10 minutes and was crisp tender perfect!

My amazing neighbor told me that she’s been making asparagus this way for a long time and that it’s really good to put some grated Parmesan on it after you finish grilling it.

Blueberry Season

In our part of the country, it’s blueberry season!
Because prices are at a yearly low and we go through A LOT of berries each year, we like to stock up. I purchased 5 gallons from a local friend who grows beautiful berries that are pesticide free. 
We use them in our protein shakes almost every morning, so we go through A LOT of berries. I’m hoping these 5 gallons might last us a few months.

 To prepare them for freezing, I cleaned my sink and then filled it up with my produce wash. I let them soak around 5 minutes and use that time to pick out any that don’t look to be in good condition.

After their soak, I spread out two beach towels on my kitchen counters and spread them out to dry. It’s pretty important to get them dry, so allow enough time to really do this well.

Once dry, I put them into single layers on baking sheets/pans and put into our deep freezer for around 1 hour. (may be more or less time depending on your freezer)

Once frozen, I put them into gallon sized bags and store them flat.
*This is important: DO NOT FILL YOUR BAGS to where they are bursting full or your berries will stick together in one big berry blog. (ask me how I know this 😉

It took me most of the day to get our 5 gallons prepared as I only had 5 pans to work with at a time, but it will be worth it to have these beautiful berries to eat in the coming months. 

If berries are cheap in your area right now, STOCK UP. They are PERFECT to add to smoothies and a superfood for your body!

Oven Roasted Sweet Potato Bites

I make these often and haven’t made them the same twice yet. We’ve tried different varieties and each of us have our own personal preferences as far as: cinnamon or salt, garlic or pepper, etc.

Use this recipe as your basic format then tweak to meet your personal preferences. Here’s an easy place to start:

Wash several large sweet potatoes well.

Cut into relatively small pieces- we’ve tried patties and fry like shapes and prefer the fry like shape best.

Spread out on a baking sheet.

Drizzle with Extra Virgin Olive Oil and then use your hands to toss the potatoes until they are coated with the oil.

Add seasonings of choice: I prefer garlic powder, onion powder, salt, and pepper.

Roast at 375 for around 45 minutes.

Seriously good, even for people like me that don’t normally like sweet potatoes.

I served these with my Pork Tenderloin with Pan Gravy, Oven Baked Brown Rice, and Cabbage Steaks.
 
SO GOOD! And all can be cooked at 375 degrees.

Pork Tenderloin with Pan Gravy and Oven Baked Rice

I’ve made this recipe a few times now and think I’ve finally got it right. The last couple times it was a little too salty for us. This time, I think it was just right.

I got so excited to get it all plated up that I never took final pictures, unfortunately, but trust me, this recipe is a KEEPER.

Oven Baked Pork Tenderloin
Ingredients needed for Tenderloin:

1-2 lb pork tenderloin- cut off silver skin and any fatty pieces you can see
1/2 c. extra virgin olive oil
1 tsp. yellow mustard
1/4 c. low sodium soy sauce (or you could use Braggs liquid aminos)
3 TB. lemon juice
1/4 c. red wine vinegar
1 TB Worcestershire
1 TB minced garlic
1 tsp onion powder

Mix all together then reserve a few tablespoons to the side.

Put the tenderloin in a large ziploc bag with the marinade and let refrigerate for 4 hours or so.

Heat oven to 375. Sear each side of the tenderloin in a skillet on the stovetop for 2-3 minutes.

 

 

Put in glass baking dish and cook for around 40 minutes (depending on thickness of your meat and oven temp).

Remove from oven and let rest 5 minutes before slicing. Top with Pan Gravy.

 



Tenderloin Pan Gravy
Ingredients needed for Pan Gravy:

Pan Scrapings from when you brown the tenderloin
3/4 c. low sodium chicken broth
3 TB reserved marinade from recipe above
2 tsp unsalted butter

Put same skillet you used to brown the tenderloin back on the stove and put on medium heat. Add chicken broth and scrape up all bits stuck to the bottom.

Add the reserved marinade and let it boil down a bit (around 2 minutes or so). Add butter and remove from heat. Stir til melted. Pour over tenderloin or use as a gravy on the rice.

Oven Baked Rice
Ingredients:
1.5 cups long grain brown rice (comes in a bag usually)
2 and 1/4 c water (or you can use low sodium chicken broth for more flavor)
a few pats of butter
salt (if desired)

Either microwave or heat the water to boiling. While doing that, put the rice in a glass baking dish and put a few pats of butter on top.

 

Once water is boiling, pour over top of rice/butter mixture.
Cover tightly with foil.
Bake
1 hour, then remove and check. If it looks almost done, fluff with a
fork and then cover with foil for about 5 more minutes.

This is great when topped with the pan gravy from above recipe! 🙂

I served the tenderloin and the rice with oven baked sweet potato bites and cabbage steaks.

All of these foods can be cooked at 375 so it makes for easy preparation.
