Lemon Herb Roasted Chicken Breasts (Tribe Member Recipe)
Recipe (Lean Protein): Lemon Herb Roasted Chicken Breasts
Serves 4
2 lemons, sliced
1 tablespoon rosemary
1 tablespoon thyme
2 cloves garlic, thinly sliced
4 chicken breasts (boneless, skinless)
dash salt & pepper
1 tablespoon extra virgin olive old
Preheat oven to 425F. Layer ½ of the lemon slices on the bottom of a baking dish. Sprinkle with ½ of the herbs and ½ of the sliced garlic.
Place the chicken breasts on top and sprinkle salt & pepper. Place remaining lemon, herbs and garlic on top of the chicken. Drizzle with olive oil. Cover with a lid or foil.
Bake for 45 minutes until chicken is cooked through. If you want the chicken to be a bit more “roasty” then remove the lid/foil and broil for another few minutes (watching carefully not to burn it).
Serve & enjoy!
Tip: You can add a leftover sliced chicken breast to your salad for lunch the next day!
Super Simple CrockPot Roast (Tribe Member Recipe)
Super Simple Pot Roast: (recipe from Pinterest). This one is NOT all natural, not made from whole foods, but it easy and tasty. My whole family loved it. On a busy day, it will work!
Ingredients:
2-3 lb roast
1 packet brown gravy mix
1 packet italian dressing mix
1 packet ranch dressing mix
½ c water
Put roast in Crock Pot. Mix 3 packets with water and pour over top. I also added carrots and celery. I cooked on high for 4 hours.
I served ours with a bag of frozen cauli florets that I microwaved. My kids even liked the cauliflour!
Honey Garlic Butter Salmon (Tribe Member Recipe)
Honey Garlic Butter Salmon!
I originally found the recipe online and then just tweaked it a bit. The truth is that I am NOT a big fan of fish, but my son LOVES IT, so I’m trying to find new ways to prepare it.

Ingredients needed:
3 TB Butter (melted)
2 tsp minced garlic (i use the kind in the jar that is pre-chopped)
2.5 lbs salmon
1/4 c. honey
juice from 1/2 a lemon
seasonings as desired
Preheat oven to 375 degrees. Line a sheet pan with foil big enough to make a packet around the fish.
-Mix your melted butter with the honey, garlic and lemon. Whisk it til blended well.
-Place salmon in the middle of the foil and then pour the mixture over top. Spread it around as evenly as you can. Season as desired.
-Fold foil around the fish and make a tent. Seal it up good or all your juice will run out (ask me how I learned that lesson!)
-Bake for 15-18 minutes. Open your foil up then turn the oven to BROIL and broil for 3 minutes or until browned.
I served ours with some sautéed spinach, some broccoli, and fresh berries. We all liked it and my son and husband LOVED it.
