This is one of my favorite recipes.
It’s healthy. It’s dairy free. It’s gluten free. It’s quick. It’s easy AND my kids even like it.
I throw the chicken breasts in completely frozen, dump in all the other ingredients and let it go all day.
Ingredients:
3-4 chicken breasts
1 onion, chopped. (I sometimes leave this out if my kids are being extra picky)
1 cup chicken broth
1 14-oz can diced tomatoes
1 TB chopped, minced garlic (I get mine from a jar)
1 14-oz can of full fat coconut milk. (I get this from the Mexican food section of the grocery store. Shake it well before opening).
1 small can tomato sauce (8 oz)
2 TB Italian Seasoning
Salt and Pepper to taste
That’s it!
Dump it in. Let it go. I do all day on low (7-8 hours).
Remove the chicken and shred. (You can me quick work of this by using your hand mixer to shred the chicken),
Add chicken back to the slow cooker, stir, and serve!
