Growing up, I had a favorite soup that my sister and mom make. It was so good! Potatoes, broth, cream cheese and topped with more cheese. The ultimate comfort food!
I’ve been trying to come up with a healthier version and although I don’t think I have it perfected, last night I made a version that was super delicious. AND it’s only a few ingredients!
Here’s what you need:
-2 boxes chicken broth (I use low sodium)
-1 bag frozen cauliflower (16 oz) Feel free to do more if you’d like
-seasonings as desired (garlic powder, salt, pepper)
-8 oz block cream cheese (to be added later)
Here’s what you do:
-Put the broth, cauliflower, and seasonings into the crock pot. Turn it on HIGH for 4 hours or low for longer.
-Add the block of cream cheese and cook on high for 30 minutes.
Get out a blender (or if you have an immersion blender that would be even better. I don’t, so I used my ninja blender). Ladle your soup into the blender and briefly blend it.
Put it back into the slow cooker.
To thicken it up a bit, I removed a ladle full of soup and blended it with several tablespoons of cornstarch. Then add this back to the crockpot and let it cook another 30 minutes.
Our soup was thin but y’all, SO GOOD!!!
We served it with some grilled pork tenderloin for protein and some veggies.
